¾ oz Plantation Stiggins’ Fancy Pineapple Rum

2 dashes Aperol

¼ oz fresh lemon juice

2 dashes ginger bitters

Chilled dry sparkling wine

Combine in a champagne flute, filling with sparkling wine. Garnish with a pineapple chunk.
